Huevos Rancheros 1, 2, 12 Casserole

Here goes another overnight breakfast casserole!

You need:
One baking dish...I'm lazy and use disposable
1 dozen eggs
1 dozen corn tortillas
1 cup milk 
1 can beans (refried, black, pinto, ...you choose)
2 cups salsa
2 cups shredded Mexican blend cheese

You are gonna layer like you do lasagna.
1st layer- 1 cup salsa
2nd layer- 6 corn tortillas
3rd layer - 1 can beans ( drained if needed)
4th layer- 1 cup cheese
Pour in eggs scrambled with milk
5th layer- 6 corn tortillas
6th layer- 1 cup salsa
7th layer- 1 cup cheese 
Kinda mush it into the egg, so that the tortillas get covered.

This can store in your fridge overnight. When you get up, pop it in a cold oven. Set it to 375F for about 45 min. Breakfast is served.
Play with your food! Try 1 lb sausage or chorizo, 1 can drained corn, 1 can drained diced tomatoes, 1 diced potato (cooked)....whatever floats your boat! I strongly encourage playing with you food!
