Recipe - Cranberry White Chocolate Oatmeal Cookies

Cranberry White Chocolate Oatmeal Cookies


I make these all time. However, this time we subbed coconut oil (it gets hardened when cool) for butter.

Score One for the Cookie front! They had an addictive flavor and unique texture. Plus Coconut oil is very good for you.


Preheat oven to 375F  190C.

Cream together 

1 cup coconut oil
3/4 cup white sugar
3/4 cup brown sugar

Mix in 1tsp vanilla.

One at a time, mix in two eggs.

Mix in 1 tbs milk.

In a separate bowl, combine 


2 cups flour
1 tsp baking soda
1 tsp baking powder
1 tsp kosher salt.

Mix that in a bit at a time.

Slowly add 2.5 cups quick oats

I tossed in half a bag on white chocolate chips and a bag of craisins.

Bake at 375 F / 190 C for 11 min on a parchment paper lined cookie sheet. I won't bake without parchment any more. It makes life so much easier.


Makes 50ish cookies.
