Tricky Chicken and Cheese

This is a process. My kids love veggies and strange things like Quinoa. So, I didn't bother with the food processor step needed to fool children. I also added broccoli.

This is a process,that once you master you can change things up to suit your family:




In a big sauce pan or I use a deep sided skillet, put 1/4 cup butter, and 1/4 cup flour. Cook them together for a few minutes. You will get a paste.

Then, slowly whisk in about 2 cups milk, give or take...I don't measure. You just want a gravy.

Mix in about 2 cups shredded Mexican blend cheese (it melts the best). Then add spices....I use 1tablespoon Cajun seasoning, a pinch of salt, and 20 grinds of pepper. You can totally use what your family likes.

In a blender, put one medium bag of thawed frozen cauliflower. Chop it up to bits and add it to your cheese sauce.

In a baking dish put 6 boneless skinless chicken breasts that have been chopped into bite size chunks.

Pour your sauce over the chicken and mix it all up.

Bake at 375 Farenheit (200 C) for 25 min or until chicken is cooked through.



I served mine over red quinoa. Kid friendly choices would be rice, veggie pasta, regular pasta, quinoa, or even barley.


If you mix in cooked noodles, you can call it Mac and Cheese with chicken. Nobody needs know about the cauliflower.
