Recipe - One Pot Dumper

One Pot Dumper


This a a no-measure, no-chop, no-time, lazy mom (or over tired) mom recipe. It hits all the food groups, and is done in the time it takes to bring water to a boil and boil 1 lb of pasta. If you use whole grain pasta, you don't even have to feel the least bit guilty about this one pot meal.


Put the water on to boil in a big pot ;)

In a large skillet, brown 1 lb ground beef.

Toss in a handful of dried minced onions, a pinch or two of salt and pepper, and a pinch of red pepper flakes.If you are really full of energy, sprinkle in some garlic powder.

Open and drain one can of kidney beans. Dump them in.

By now, the water should be boiling...dump in the pasta (follow the box directions).

Back to the meat...open and dump in one can of bush's Chili Beans (don't drain this one)

Open and dump in one can can diced tomatoes, juice and all.

Stir and bring to a simmer.

Is your pasta done? Drain it. Dump it in with the meat mixture.

Toss in a handful of cheddar cheese or two (two for us), and dollop in as much low fat sour cream as you want (about 2 big serving spoon full dollops for us).

Sprinkle in some chopped (dried) parsley if you are like me and have an obsession with there being something green on the table at every meal.

Stir and serve.

Done.

PS I am very over tired. Hence, this meal.
