Easiest Recipe Ever

Variations on the easiest recipe ever:

What you must have- chicken breast (or any meat you choose) and salsa
 
What I like to add- shredded cheddar cheese and a can of black beans or corn, rice** (pictured is a Sams sized salsa, I use half, and only 2 boneless skinless chicken breasts, chopped up)



Way you can cook this: crockpot, dutch oven braise, baked

This is one of those recipes I use when "Mom has had a long day and doesn't want to cook but we had pizza yesterday" kind of days happen.

Step 1: 
Super tired mom- throw three or four flash frozen boneless skinless chicken breasts in a crock pot in the morning.

Medium tired mom- throw three or four boneless skinless chicken breasts that have been cut into bite size pieces in a baking dish when you realize people want you to feed them.

Mom who is just not in the mood- brown up three or four chopped up boneless skinless chicken breasts in your magic pot...aka your enamel coated dutch oven that you love so much you named her...



Step 2: 
Super tired mom- dump one regular sized jar of salsa over the frozen chicken breasts. Put the lid on the crock pot. Set to high for 4 hours, then low for 2-4 hours. You can serve it here or proceed to step 3.

Medium tired mom- dump one medium sized jar of salsa over the chicken. Bake at 350 F for about 25-35 min, or until juices run clear.

Mom who just isn't in the mood- dump one medium sized jar of salsa and, if needed a cup or so water, over your brown chicken. If you are feeling froggy, add a can of drained and rinsed black beans, or a small bag of frozen corn. Mix it together. Cover. Stick in your oven to braise low and slow at 275 F for 4 hours.

Step 3:
Super tired mom- about 30 min before you want to serve it, make up some rice (I cheat even more and use a rice maker) if you want. Take the lid off the crock pot, shred the chicken, and return it to the pot. Shoot, you don't even have to shred it if you don't want. Feeling froggy? Cover with pre shredded cheddar cheese and wait for it to melt before serving.

Medium tired mom- remove from oven, cover with shredded cheese, and bake until melted and bubbly. Make a pot of rice.

Pictured: baked in an oven safe skillet....I don't like dishes.

Mom who just isn't in the mood-
Remove from oven and uncover. Cover the chicken bites with shredded cheddar cheese. Place it back in the oven uncovered until the cheese melts. Make a pot of rice.



**rice- two equal parts water to one part rice. Bring to a boil, reduce to a simmer, cover, cook on stove top on low for 20 min.

Serve over rice, and dinner technically is done. Add extra veggies if the moment suits Ya!

I've made this all three ways. It is a process really. This has become comfort food to my family since we eat it so much. My favorite is the dutch oven method, but there are days when that is just not gonna happen.
